How to Cook the Perfect Steak
Allow your steak to reach room temperature prior to cooking—about half an hour, depending on the size of the steak. DO NOT let it sit out for more than an hour.
For pan searing, use an oil with a high smoke point (such as pecan oil) and a cast iron skillet.
Preheat grill or pan to very hot, then add steaks and sear 2-3 minutes for each side. For grilling, move steaks to indirect heat to finish cooking. For pan seared, turn down heat and continue cooking or move steaks to preheated 350º oven until steaks have reached desired temperature.
