Remove the steak from the refrigerator 30 minutes before grilling.
Heat grill to medium high for at least 10 minutes before grilling the steak. Make sure to have two-zone cooking on the grill.
While the grill is heating, combine the salt, black pepper and rosemary in a small bowl.
When the grill is heated, season the ribeye steaks with the seasoning mix. Lightly oil the grill and place the steaks over the direct heat of the grill. Cook for 4-5 minutes on each side. Then move the steaks to the indirect heat area of the grill to finish cooking.
Cook to your desired temperature. Color is not an accurate indicator of final cook temperature. Ensure final cook temperature reaches 145 F for 3 minutes. Rest the steaks for 5 minutes once the desired temperature is reached.
Once the steaks have rested, slice and serve.
